Escabeche means „preserved in vinegar“ and has come to signify the peculiar method of preserving chillies together with vegetables such as carrots and onions. Jalapeño chillies prepared in such a way are very popular in Mexico. It comes as no surprise; therefore, that jalapeño is the most frequently used chilli in Mexican cuisine.
